Mr. Ushigome was born in Tokyo in 1984. Fascinated by the knife skills of a fish chef he met when he was young, he decided to pursue a career in cooking. He gained approximately 18 years of experience at Japanese izakaya and seafood restaurants in Tokyo, mastering a wide range of fish dishes, including sashimi, grilled fish, simmered dishes, hot pot dishes, and appetizers that pair well with sake. Since the flavor of fish varies depending on the season, region, and freshness, he places great importance on assessing the condition of the fish each day and serving it using the optimal cooking method. Through sashimi platters, seafood dishes, and sake, he conveys the charm of Japan's seafood izakaya culture.
