Our Specialty Unaju (broiled eel served on rice in a lacquered box) uses carefully selected seasonal eel. Eel’s flavor changes depending on climate and location. Therefore, we carefully select eel from suppliers in the most seasonal areas across Japan. The dish also features the timeless taste of a special sauce made from authentically brewed Niigata soy sauce. When it comes to our ingredients, whether it is vegetables from Niigata and Nagano, fresh fish from Aomori, and eel from all over Japan, everything we use is procured from the best region for the season. By using only the freshest and tastiest ingredients from trusted locations, we provide our customers with safety and reassurance. We like to provide guests with a space of their own, and we offer special hospitality to each of our customers by making changes to the menu and remembering the preferred tastes of regular clientele.
