Mr. Murata offers dishes that preserve tradition while incorporating seasonal ingredients to cater to contemporary tastes.

He was born in 1982 in Tokyo. During his student years, he worked part-time at Tempura Yamanoue, where he discovered the allure of Japanese cuisine and sake. This experience inspired him to enroll in a culinary school, motivated by his determination. After graduating, he honed his skills and knowledge at a kaiseki restaurant in Tokyo. He then worked for many years at Kanda Shinpachi, building a career as a chef. In 2015, he opened Shutei Hokura in Shimbashi.

- If it is said that it is a delicious shop of sake, it may not be [Kanda Shinpachi]. It is a shop that I have been working for myself, but it is a long-established shop in the sake industry. The lineup of sake is great, but I think it's really amazing that you can eat a good, delicious Japanese food at a pub. It is also good that the layer of the cook is thick. There are private rooms, counters, and seating areas, so you can use it for any occasion with entertaining, drinking with friends, drinking alone, and more.

- Yakitori Aging Liquor Hatake, located in Monzen-Nakacho, is a shop I often visit in a private setting, getting along well with the shopkeeper. It is a restaurant where Yakitori offers main Japanese-style course dishes, and even though it is a Yakitori restaurant, it is a restaurant where there is a proper "rice cake". Sake is prepared, and you can enjoy Japanese food and Yakitori while sipping sake. The atmosphere is good, so you can relax, it is recommended for dating.
