Inaba's style of cooking uses tilefish. The grated meat is cooked over the charcoal fire with a serving of soy sauce, and the bones and leftover bony parts are put in a soup that cooks the rice. The Kyoto-made Manganji peppers and Kujo spring onions are lightly fried, simmered in sweetened soy sauce, and mixed in. This dish fascinates customers with its soy sauce fragrance.
