Ginza Yaesakura_Noriaki Masuda

Born in Kanagawa Prefecture in 1974, he embarked on a culinary career after working part-time at a sushi restaurant during high school. He began his apprenticeship at a ryokan (traditional Japanese inn) in Izu, Shizuoka, and has dedicated himself to honing his skills in Japanese cuisine. He further refined his abilities at renowned restaurants in Tokyo, cultivating solid technique and sensibilities. He also gained experience in the meat industry, becoming an expert in selecting and sourcing rare cuts of meat. His talent was recognized when Ginza Yaesakura opened, and he was appointed head chef.
