We sandwiched nodoguro (rockfish) from Yushima using kelp from Rishiri. Small variations in the moisture content of the rockfish give rise to wildly different flavors. Not too fast, not too late. By choosing the exact timing to remove the kelp, it's finished with the aroma of the sea to create a masterful dish. Large clams are sent directly from Hamamatsu. Care is taken to boil it in just the right way using freshly boiled water. It is marinated in our uniquely developed seasoned stock, with no effort spared. We take pride in bringing the best out of the finest ingredients. Our mission is to create delicious food. To do that, we carefully source quality ingredients, and bring the best out in them with our cooking. We never use pre-made products, and go out of our way to make sure everything is handmade.
