Akou miso shabu-shabu

Duck with mushroom and miso paste

Oshima Miso Barley Miso Yamaguchi Prefecture
The brewing method, which has been passed down for over 100 years, is handmade koji made in the traditional "moro kiln". Boiled beans cooked over firewood in the now rare "okudo" are brewed only in the winter. The soybeans used are "Toyomasari", the highest quality soybeans from Hokkaido.
