Specialty of Chef Namai. Tartare of Ozeki Beef will appear when you dig into the meringue made with the bony part of sardines. When biting, the good aroma of onion and savory taste of red meat will slowly spread in your mouth, then you will feel refreshing sourness of lemon as an aftertaste.

Enjoy the chewy texture of gnocchi, and savory flavor of lightly-heated hard clam. Served with a puree made of canola flower and bitter melon, with its bitter taste you will sense the spring. Firefly squid is also added for a hidden taste.
