Sukiyaki Shabu-shabu Hirano serves sukiyaki made with A5-rank Japanese Black wagyu rib-loin, Kikaijima brown sugar, and premium folic-acid eggs from Mizuho Farm, cooked by staff right in front of guests at the counter while they explain the restaurant's commitments. The shabu-shabu features Japanese Black wagyu misuji with Kyoto-style yudofu prepared in kelp broth extracted the day before and served with house-made ponzu. For dessert, guests enjoy homemade warabi mochi and whisk their own matcha, offering a Kyoto-inspired cultural experience.
