We have each day's portion of eel delivered-always live. The chef personally prepares each eel one at a time. Our secret-and the name of our restaurant-is sansho (Japanese pepper). Our sansho, from Kyoto, completely unlocks the flavor of the eel. We are very particular about our sansho, since we use it to draw out the flavors of the eel.
