Mr. Shindo attracts diners with his creative cuisine, using carefully selected crabs and adding Italian elements.
He was born in 1989 in Tochigi Prefecture. His interest in the restaurant business led him to work at izakaya (Japanese-style pub) and ramen stores, after which he joined a famous Italian restaurant and began training, gaining full-fledged knowledge and skills. After managing an Italian meat bar, he became the head chef at Steam Crab Labo when it opened in April 2023. Using six kinds of crab and other carefully selected ingredients, he attracts guests with his creative dishes with the essence of Italian cuisine.
