The rice is a blend of new and old Yumepirika rice from Hokkaido.
The rice is washed and soaked with great care so as not to spoil its deliciousness, and then the rice is cooked in a custom-made Nambu iron pot. Shari vinegar is a blend of red vinegar and pure rice vinegar, coarse salt, and a small amount of sugar. After cutting the rice, be careful to keep it moisturized and keep it warm.
