Mr. Koseki came across "simmered fresh fish" during training and became committed to Dashi.
He was born in 1972 in Aomori. Since childhood, he has been familiar with cooking and has learned the pleasure of cooking by himself. He chose to become a chef after receiving compliments for the dishes he served his friends. After graduating from school, he entered the culinary world. During his years of training, he came across "simmered fresh fish" and became committed to dashi (soup stock). He is currently working at Akasaka Ando. Under the motto of "Doing the ordinary work with care," he creates a gentle flavor by carefully carrying out each task one by one.
