Fresh read morefish from the Toyosu market and rare fish purchased through its own routes are available, and you will encounter and discover something new every time you visit. If you leave the sushi choice to the chef, the nigiri course (¥12,100) and the appetizer course (¥16,500) are recommended. Each dish is made with careful handling of the ingredients, and the knife and cooking methods are tailored to the ingredients to bring out the best flavor. Sake is carefully selected from all over Japan, and all of which goes well with sushi and other dishes. The shari (sushi rice), a blend of red vinegar and rice vinegar, has a mild acidity, a rich sweetness, and a moderate saltiness that enhances the flavor of the ingredients.
