Kanazawa is his hometown, and he wants to share the local flavors with his guests, so he meticulously prepares seafood such as white fishes, bluebacks, and shellfishes from the nearby ocean. He picks out the best fish of each season to serve to his customers, from sardines in spring to Japanese whitings in summer, sea breams in fall, and amberjacks in winter.
