With a focus on eating for your health and beauty, Karin mixes French techniques into creating healthy Japanese food that you can enjoy to your heart's content. There are 3 types of courses on the menu to choose from, all packed with flavors of the season. The dashi (broth), which is a necessity of Japanese cooking, is made every day with charcoal grilled flying fish, Oita hana donko (high-quality shiitake mushrooms), and Rishiri konbu. The owner-chef then takes the carefully selected ingredients, pins down when they're in season, and draws up a menu that changes daily. The [Nama Uni] is made from the highest grade ingredients available in that season, such as the Kitaura red sea urchin or the Hokkaido Konbumori bafun sea urchin. You can enjoy extravagant ingredients such as this, along with rank A5 Saga beef and red sea bream, all under one roof! Founded in 1961, and beloved by its many customers, Chikae combines the class and vibrancy of a restaurant with a homely, relaxed atmosphere. Initially, owned by a coal mining baron, Nakajima Tokumatsu, the historic mansion was renovated to have 30 or so Japanese styled rooms that could accommodate for anything from family outings, company events, or tourists to ceremonies or memorial services. The programs on offer are very efficient, to ensure everything runs smoothly. The biggest highlight, however, has to be the giant tank on the other side of the counter on the first floor. Watching fresh fish from Kyushu elegantly swim while you dine is a whole new experience, especially when dishes such as [Ika Iketsukuri] and [Sekiaji Sugatazukuri] are prepared straight out of the tank for the freshest taste possible.

This dish is made from the thigh meat of free-range chickens from Miyazaki , grilled over oak charcoal to produce an outstanding taste and aroma. The heat of the fire reaches every part of the chicken, and using oil from the chicken, aroma and color are added. This dish is flavored with a blend of various roasted salts. When thinking of Kyushu and Hakata cooking, offal stew comes to mind. For the main ingredient of the offal stew, the entrails (small intestines, a cow's stomach), we use the Bungo cow, whose meat has a strong fatty flavor. This is finished with a soy sauce flavoring, using a traditional Kyushu stock that is popular in home cooking. When interacting with customers, we always put our heart into seeing things from the customers' perspective. We think that by going about our work with confidence, we give the customers a sense of security. The shop is brimming with vitality, and old fashioned warmth. Every day, a wide range of people crowd in, both locals and tourists.

In the spring of 2018, a new French restaurant opened in Kego, Fukuoka to great anticipation. Chef Mori, who honed his skills at top restaurants in France and Japan, chose to establish his own restaurant here with a desire to cook using the ingredients of his hometown of Kyushu. The French cuisine he presents is based on traditional French techniques but is full of wholesome flavors of local ingredients. There is a wide selection of dishes that are only available here, such as the signature [Fritters of Sea Anemone from the Ariake Sea], the innovative potato salad known as [Lightly Smoked Potato Salad], and [Sake Lees Blanc-Manger], which exudes aroma of umami (Japanese savory taste) of rice grains. There is a variety of a la carte dishes and courses so customers can enjoy the food according to their own preference and the occasion. Even the side dishes are of astonishingly high quality. [Nadai Matsuhonke] is udon (thick noodles) restaurant on the second floor of the building near to the station. Do not miss our [Special Curry Udon] using our proud [double soup] which is made with chicken stock, 4 kinds of Japanese broths, and spices which are carefully-selected and originally-blended. Its taste has a punch yet is not too spicy. Its exquisite taste is popular for children to adults. When you are tired of everyday udon dishes, we recommend the [Taiwan Maze Udon (noodles to mix with other ingredients)], which is similar to oiled ramen noodles, with savory and spicy ground meat. In addition to lunchtime, we open from 5:30 pm to 5:00 am so that you can visit us for various occasions such as lunch, dinner, and to enjoy the last dish after drinking alcohol. We are also ideal for casually enjoying drinking alcohol, as a wide variety of skewers are available which go well with beer.

Sangaono, located in Itoshima city, is about an hour drive from Fukuoka city. The restaurant serves delectable kaiseki cuisine that features the local bounty from the sea and mountain. Lunch and dinner menu have a separate list of menu that uses seasonal ingredients available during the month.
