This is the restaurant where they carefully select Kagoshima black beef, the best Wagyu in Japan, and cook it as chunks in a stone oven to please your palette. You can appreciate excellent dishes which give you a pleasant surprise with their creativity. The menu consists of traditional local dish arranged with ingredients sourced from Toyama Sea, seasonal fruits and vegetables from Terada Firm. Making full use of the fact that it started out in Noto’s Ushitsu area, “Ajiraku Yumeri” sources its seafood in a unique way. This restaurant was founded with the desire to offer the freshest, most delicious food. The “Sashimi (sliced raw fish) Platter” on any given day is glistening and alluring, piled with rockfish, flounder, whale, tilefish, Japanese amberjack, whelks, and mackerel all fished that day from Noto. The fish, which are auctioned off at 7 each morning at Ushitsu fishing harbor are delivered to the restaurant in time for service that day, and promptly prepared. To go along with the seafood is local sake (Japanese alcohol) sourced from five distilleries. The owner loves the place where he was born and is captivated by the local foodstuffs. Since opening in January 2016, they have been delighting customers with beautifully presented dishes that are based on delicate yet bold concepts. Makoto Doi, the chef-owner with years of experience in Japan and Europe, exhibits his skills in the fully open kitchen. He offers unique French dishes inspired by the outstanding ingredients of the Hokuriku Region and draws on his experience in Japanese cuisine. Both lunch and dinner are served as [Omakase Course] (chef's selection) only. This restaurant with a Japanese garden designed by Mr. Mirei Shigemori, one of the top garden designers in Japan, is in a renovated building which was formerly a private residence. You can naturally relax in this spacious restaurant of 1,650 m². Enjoy the various exquisite dishes with elegant appearances, using an abundance of local ingredients, such as [Kaga Vegetables] and [seafood] from Kanazawa. Nagomiya, located in the Katamachi Denma shopping district of Kanazawa, is a restaurant popular for its Japanese cuisine made with local ingredients. The food served here is full of seasonal flavors, such as fresh fish caught in the morning in Ishikawa and Toyama prefectures, and Kaga vegetables grown carefully by local farmers. Each dish at this restaurant is made with loving care by the chef-owner, Takashi Koitabashi, and is packed with wholesome goodness that warms the heart.
