This restaurant is notable for buying half, and even whole heads of cattle ranked A4 or higher, allowing them to offer everything from top cuts like loin and outside skirt to rarer choices. The [IKKOU Sampler] is offered in only limited numbers and presents a selection of that day's recommended cuts, including marbled meat options. You will be satisfied with this dish! This deluxe domestic gyutan specialty restaurant is very popular with critics! Nothing but the finest gyutan from the best domestic Kuroge Wagyu is used here. The meat from Kyushu, in particular, has both a wonderful sweetness and umami. Delicious options to have here include the [Tongue Toro Sashimi], a thinly-sliced dish made using the prized back part of the tongue, as well as the [Tongue Stew], which features gyutan that has been stewed for 3 hours!
