The top recommendation is their [Beef Tongue Steak Marinated in Hakodate Wine]. Wagyu Ishizaki serves Ezo Tajima beef (one of the highest grade of Kuroge Wagyu) that's been reared in contracted farms on the outskirts of Ebetsu-shi. They oversee the production of the cattle directly, and then buy them whole.
The different cuts of meat are served as yakiniku (Japanese BBQ). The [Thinly-sliced Rare Steak], made with delicious Ezo Tajima beef, is first grilled and then trimmed to remove the outer layers. While the word “steak” is usually associated with thick slices of juicy meat, the end result is more like sashimi! It is a tasteful dish that you can only have in a yakiniku restaurant.

10. 43° STEAKHOUSE

43° STEAKHOUSE serves dry-aged steaks that are the talk of the town. Dry aging is the process of drying beef for 4 - 6 weeks in an environment where the temperature, air flow, and humidity are carefully controlled. As a result, the flavor of the beef becomes more concentrated.
The steakhouse uses specially selected, lean Hokkaido beef on the bone, and does the dry aging in the restaurant itself! The beef is usually served - still on the bone - on a large platter that makes it perfect for sharing. However, you can get it in smaller portions for lunch and enjoy it on your own.
The outer part of the steak is fragrant. With every bite, you get more of a fragrance that's distinct to dry-aged beef, along with the umami of the meat.
