Types of Tofu

In Japan, there are two types of tofu: silken kinu and firm momen. In the Edo period, the firmness of momen tofu marinated in seawater was suitable for being saved and transported. This way of producing tofu still exists in some rural parts of Japan. Both types are often used in various Japanese dishes: miso soup, hotpot, and chilled tofu.
Tofu is also very good for supplying calcium. As most Asians are said to be lactose intolerant, soy milk is adequate for their body compared with milk. Substituting ingredients with soy-based food is a great way to improve your health.
