Diners will experience the refined, fatty but clean taste of this fish that is full of umami (Japanese savory taste). The restaurant has an impressive menu, which includes [Nodoguro Shioyaki], in which nodoguro is grilled thoroughly to deepen the flavor before being seasoned with salt, and [Nodoguro Shabu-Shabu], through which guests can enjoy its changing flavors depending on the ingredients and how long they were cooked in the broth.
