There's a variety of flavors, such as traditional flavors and extremely unique flavors. The noodles, as well as the ingredients they use as toppings, vary from place to place. Their [Bajiru Soba], which uses chewy Kamehama soba, has a reputation that reaches far and wide. Using protein-rich, low-fat horse meat from Kumamoto Prefecture, along with dashi (broth) that's made by slowly simmering vegetables, pork bones, and katsuobushi (bonito flakes) over 4 - 5 hours, [Bajiru Soba] is topped with generous cuts of horse meat and mugwort. Only 38 bowls of this recommended dish are made each day!

2. Onna Soba
This restaurant that specializes in Okinawa Soba and home cuisine uses Agu pork and dashi made from skipjack tuna to create their homemade Okinawa Soba. It is near the Moon Beach in Onna-son. Their soba, as well as their a-la-carte and set menus, reflects true traditional Okinawan home cooking, served to perfection in an old private house-style restaurant.
