2. Nichigetsubou Tan（Kyoto）
It has a great ambience in the renovated 100 years old townhouse, filled with a sense of history and tradition with a counter table made from a 300 years old gingko tree. Their dishes like [Ise lobster grilled on ceramic plate with house made XO sauce] and [Sushi of sea urchin and salted sea cucumber innards] have a unique worldview beyond the frame of traditional Japanese cuisine. 4. Aun（Osaka）
[Aun] is the place where you can enjoy Japanese cuisine prepared with abundant seasonal ingredients in a luxurious modern setting. Although it is located 3-minute walk distance from Shinsaibashi station right in the middle of town, they charmingly stand there like a hideaway separate from the hustle and bustle. 5. Yakiniku Fumiya（Nara）
[Yakiniku Fumiya] has a reputation of serving delicious Yakiniku (Japanese BBQ) prepared with carefully selected domestic ingredients. They use only cow beef, mainly Yamato-gyu, carefully selected on their own route. The melt-in-your-mouth meat is extremely tasty as a melting point of female beef is low. You can see why this restaurant were listed in the Michelin guide Nara 2017. The hard-to-get cuts such as [Beef tongue] and [Outside skirt] which can only be attainable in small quantities from a whole beef are recommended. 6. Sumibi Yakiniku And Steak Banka（Nara）
The owner/chef, having almost 45 years experience at a butcher shop, opened this restaurant to offer good meat to many customers at an affordable price. This veteran chef judges and purchases the whole cow of A5 grade Kuroge Wagyu, so that you can enjoy rare cuts such as [misuji (top blade muscle)]. The meat is prepared in "Itamae style" as the chef cut it at the counter in front of you. You will be highly satisfied with the delicious meat with only himalayan rock salt.
