Is it safe now to eat out in Hokkaido? Is it not? It is still in the gray area. But if you need some time to refresh your mind and belly, it might be the time to go out and eat, as long as you follow the safety protocol. It is now more important than ever to carefully choose where to eat. Many restaurants are taking extra steps to prevent the spread of coronavirus. How does the new normal in Japan look like for restaurants?

1. Teppan Steak Restaurant YANAGI

Teppan Steak Restaurant YANAGI has three themes; “Local production for local consumption,” “Developing new ideas from the past,” and “Treasuring every encounter.” They carefully select local ingredients, such as Kobu Kuro (premium black wagyu beef), Aged Potato “540,” and other vegetables and eggs from farms and producers that the owner-chef selected. While maximizing the ingredients to their full potential, the chef adds his own creative touch using the latest techniques of sous-vide and fermentation. The delicious food may be paired with a broad line-up of drinks, particularly wine. Customers are all seated at the counter, treated with hospitality while being entertained by the live teppanyaki grilling. Guests may casually enjoy the food and wine in a warm and inviting atmosphere.

2. ONIUSU Sapporo Susukino Main Branch

ONISU's interior has been modeled after Hokkaido snows. This restaurant features private rooms that can be used for ladies' get-togethers, dates, entertaining guests, and many other occasions. The restaurant serves rare Icelandic lamb shabu-shabu (sliced meat parboiled with vegetables) that is cut thinner than anywhere else in Japan ("oniusu" = "fiendishly thin"). The lamb meat is cut so finely that all it takes is a few dips in the hot soup for it to be completely cooked, and it melts the second you put it in your mouth, allowing you to basically drink it down. Guests can also elevate their meals with the restaurant's special tare (sauce) as well as eight kinds of salt and spices. Never have you tasted anything quite like the Melty Almost-Liquid Lamb Shabu-Shabu!

3. Sankatei

Located a 10-minute walk from Higashi-Sapporo Station, Sankatei is a stylish Korean and yakiniku restaurant to enjoy high-quality meat. Compared to a typical yakiniku restaurant’s interior design, Sankatei displays flowers and grasses leaving a refreshing impression. Within this atmosphere, the meat is served at its best time. One of the most popular menus is King Spare Rib and Salted Holstein Beef Tongue (limited quantities). The chewy Morioka Cold-Noodle uses the restaurant’s original and is definitely on the must-try list. Since there are private rooms, the venue may be used for all situations from dates to family, and parties.

4. Uminoshiki

One of the must-eats of Uminoshiki is a Savory Egg Custard of Crab Tomalley, overflowing with luxurious seasonal seafood such as urchin and thornyhead rockfish. The fragrance and rareness of this dish is emphasized with very sweet Sapporo’s yellow onions and the distinctive umami-filled flavors of Nemuro crab’s miso-paste. Crab, botan shrimp, and other live seafood are kept in the restaurant's tank to ensure maximum freshness and prepared upon order. The finest seasonal ingredients are stocked, bought directly from local markets and fishing harbors. The chef strives to present them in beautifully, always striving to offer the most enjoyable experience and the best service. Once or twice a month, the fish caught by the chef himself will be on the menu. 5. Jikiden! Haru Shouten Susukino Main branch

Haru Shouten serves a range of Hiroshima-style okonomiyaki (savory pancakes), including Miyoshi Karamenyaki, a local dish from Hiroshima's Miyoshi City that won the 5th Hiroshima Teppan Grand Prix. Other teppanyaki dishes, including oysters and fried rice, are also on the menu. The staff here were trained by the Tamu Shoten at Miyoshi so that guests can enjoy the authentic flavors of the area. The Miyoshi Karamenyaki, with its spicy sauce topping, chewy chili noodles, and juicy cabbage is irresistibly delicious. Both the sauce and noodles are sourced from Miyoshi City. An unusual feature of this dish is that, unlike regular okonomiyaki, no flour-based batter is used. The clean and relaxed atmosphere of this restaurant is perfect for get-togethers.
