Born in 1980 in Saitama Prefecture, Chef Shimizu was influenced by his father, who worked in tuna wholesaling, and decided to pursue a career in the culinary world. He began his apprenticeship at a sushi restaurant and honed his skills at establishments like Fukusuke and Otaru Sushi. After experiencing health issues, he transitioned to his current company, where he explores the realm of "beef x sushi," a new culinary concept. As head chef, he plays a pivotal role in paving the way for the world of "beef sushi." In 2019, he assumed the role of head chef at Beef Sushi Kintan in Ginza. While passionately pursuing the unique concept of beef sushi, he also constantly innovates to bring joy to his customers.
