"Motsunabe" is popular for its sweet, fatty and plump texture. One of the most popular motsunabe restaurants in Fukuoka is Hakata Motsunabe Yamanaka. The main restaurant is located in Minami-ku, Fukuoka City, and there are two other restaurants in Akasaka and Hakata. Although ordering online is also popular, for those who want to eat at a restaurant, we have compiled a list of Yamanaka's specialties and information about each store. We hope you will visit there.
Hakata Motsunabe Yamanaka was established in 1984 in Fukuoka Prefecture, the sacred place of Motsunabe, and was a pioneer in the spread of miso Motsunabe. Until then, soy sauce-flavored Motsunabe was the most common type of Motsunabe, but Yamanaka overturned this concept and brought miso Motsunabe to the status of standard. The restaurant has been overflowing with customers since its establishment, and reservations are still required.
The secret to the deliciousness of the soup is that it is cooked in individual pots. The aroma of the steam from the freshly prepared pot is sure to whet your appetite. The soup, made with an unchanged recipe since the establishment of the restaurant, is elegant, not too rich, and a perfect match for the entrails and vegetables.
"Motsunabe" filled with passion
They are committed to using only the small intestines of domestic beef. This ensures that the Motsunabe is free of any unpleasant taste or odor. The miso used as the base for seasoning is a blend of several different varieties from Kyushu. The soup, which has not changed since the establishment of the restaurant, has a sweet, rich, and thick flavor.
"Vinegared beef offal" using rare and tender parts
The slightly fragrant flavor of yuzu and the spiciness of "Karashi Mentai" are exquisite.
"Vinegared beef offal" is made from beef offal, which can only be obtained in a small amount from each cow. It is tender and easy to eat, and it goes well with our homemade ponzu (Japanese sauce made of vinegar and soy sauce). The "Karashi Mentai" is slowly marinated in Yamanaka's original seasoning solution at a low temperature. It is not only a perfect accompaniment to rice but also a perfect break between drinks and hot pot.

Motsunabe comparison set to try both "Miso Flavor" and "Soy Sauce Flavor" (for 2 to 3 persons)
The "Motsunabe" of Yamanaka is characterized by the impactful garlic flavor and the deep flavor of the broth. The soy sauce flavor has taken root in Fukuoka, while the popular miso flavor has spread after Yamanaka's own trial-and-error efforts. At the main restaurant, both can be enjoyed as a "comparison set".
