Hiroshima Andersen Kamiya-cho features a bakery on the first floor and a cafe on the second floor. This is the flagship store of the popular bakery, Andersen. In addition to foods that pair with bread, delicatessen items, wine, and cheeses, there is also a range of lifestyle goods like flowers to decorate your dining table, party goods, gifts, and even cultural glasses. The second-floor cafe serves soups and salads that are great for breakfast and lunch and french toast that is popular for afternoon tea. Here at Ajisai Shin, they use fresh seasonal ingredients that they order from local farms to prepare a variety of dishes. Among them, they serve rare "yellow chives" - a local specialty of Okayama - in an egg stew along with icefish that pair perfectly with their flavor. The chef Nogami takes fresh seasonal fish and produce to paint each dish with the color of the season. Preserving the Japanese culinary tradition of making meals that impress one with the changing times of the year, Nogami offers these ancient delights in a casual, open atmosphere. The chef acquired 23 years of culinary experience in Japanese cuisine. He opened Ajisai Shin because he wanted his customers to have a restaurant where they could feel free to just drop in for some Japanese food without the formality or expense they might find elsewhere. Their signature Pu Nim Pad Pong Curry uses crab that has recently shed its shell. In order to enrich the flavor and temper the spiciness, they add in eggs to create a mild, easy-to-eat dish. The soft-shell crab in this popular Thai dish features lots of umami (pleasant savory taste) to enjoy. They source the Thai seasonings and vegetables from an import company, and reproduce authentic Thai flavors by balancing spicy, sweet, and sour flavors, and adding fragrant herbs. They also feature a selection of Thai beer and other alcohol to pair with the food. Their “Thai Select” designation is an official restaurant certification from Thailand, so their dishes are based on genuine Thai cooking. Their most precious dashi soup stock here at Tanukiya. You can savor it most simply and directly with the kake udon (thick wheat noodles).  They make the dashi stock from kombu kelp harvested near Hokkaido's Rebun Island, and when their guests hear that, some are shocked that they would use such high quality kombu as soup stock. But while they offer reasonable prices, they are dedicated to not making compromises where they shouldn't. Just because they call themselves a "self" udon (thick wheat noodle) restaurant, it doesn't mean that they don't pay attention to the guests, and they endeavor to get the freshly made food out on time. They also remember the faces and preferences of the regulars and work hard to ensure that you enjoy yourself. In the vegetable tempura they do their best to use locally harvested produce, like lotus root from Tsurajima in Kurashiki and sweet potatoes from Naruto. They get the seasonal vegetables from a green-grocer and prepare the delicious fried tempura from scratch.

“Ika kyodai” (squid brothers) contains raw squid and squid tempura (fried). You do not have to be a connoisseur to fall for this delicious dish, in which the smell and taste of raw squid and the texture and flavor of the fried squid can be savored. Take cabbage or scallions for example, which change in quality depending on the season. Here, they source them based on the best areas depending on the time of year. The pork, eggs, noodles and sauces were sought out to best fit with okonomiyaki (Japanese savory pancake). They strive for excellent in-store service, so they take your order while you stand in line and begin preparing it before you are seated. The goal is to feed you quickly while still preparing each dish with the utmost care. The gold badge is only awarded to members of the grilling staff who passed the grilling test. It is a symbolic badge of Reichan. With in-company testing, they strive to keep the skills and motivation of the staff up, to always serve delicious okonomiyaki.
