One of the biggest appeals of Japanese course dining is experiencing multiple cooking techniques and flavors within a single meal.
The course moved beautifully between delicate appetizers, sushi, grilled specialties, tempura, soup, and dessert, creating a balanced dining journey from beginning to end.
Each course arrived beautifully presented, with thoughtful attention to detail. The combination of textures and flavors made the meal feel carefully planned, while the ingredients were allowed to shine through simple yet refined preparation.
Fresh Sushi Highlights

Of course, sushi remains one of the main attractions at Sushiyama Shinjuku.


The lightly seared medium fatty tuna had a rich, buttery texture with a beautiful balance of flavor. The marinated red tuna offered deeper umami notes, showcasing the careful preparation behind each piece.
One of the highlights was the ikura choko don. The generous serving of salmon roe added a satisfying burst of flavor, perfectly complementing the warm rice underneath.
The seasonal nigiri allowed the chef to showcase seafood selected for that particular day, while the hosomaki provided a lighter contrast to the richer sushi pieces.
Rather than relying on heavy seasoning, each piece focused on precision, balance, and the natural character of the ingredients.
More Than Just Sushi

Although sushi is a highlight, what makes Sushiyama Shinjuku memorable is the variety of dishes beyond nigiri.

The meal began with chawanmushi (savory egg custard), featuring a smooth texture and gentle flavor. This was followed by three Hokkaido delicacies, introducing regional specialties before moving on to the crab dashi tamagoyaki.

Seasonal Fish Grilled with Saikyo Miso

The sweet, rich flavor of Saikyo miso complemented the delicate fish beautifully. The grilling process created a wonderful aroma while keeping the inside tender and moist.
It was a great example of how Japanese cuisine can transform simple ingredients through careful preparation and traditional techniques.
Charcoal-Grilled Shiretoko Chicken Thigh

Cooked over charcoal, the chicken developed a subtle smoky aroma while remaining juicy and tender. The seasoning was carefully balanced, allowing the natural flavor of the meat to remain the focus.
While the grilled fish and Shiretoko chicken were our overall favorites, the ikura choko don was another unforgettable part of the course thanks to its rich flavor and beautiful presentation.
Tempura Selection

The batter was light and crisp, allowing the individual flavors of each ingredient to stand out without feeling heavy. The asparagus was especially memorable, with a delicate sweetness and tender texture that paired beautifully with the perfectly light tempura coating.


Don’t Skip the Hokkaido Drinks

For beer lovers, the Sapporo Black Label is a great choice. Originally from Hokkaido, this well-known Japanese beer has a crisp and refreshing taste that complements seafood and grilled dishes. Also, be sure to check out their great selection of Hokkaido craft beers.


For a non-alcoholic option, I highly recommend the Yubari melon soda.
Made with the famous Yubari melon, one of Japan’s most luxurious fruits, this drink has a naturally sweet and rich flavor. The addition of real melon pieces gives it a completely different experience from typical melon-flavored sodas.

The melon shake, made with milk instead of soda, offers the same delicious melon flavor but with a sweeter and creamier taste. It would pair perfectly with dessert.
It quickly became one of my favorite drinks of the evening.

Another advantage of Sushiyama Shinjuku is the flexibility of the menu.
The course options are ideal if you want to enjoy a carefully planned Japanese dining experience featuring seasonal specialties.
However, if you prefer a more casual visit, individual dishes can also be ordered à la carte.
This makes the restaurant suitable for many occasions, whether you are planning a romantic dinner, meeting friends, or introducing someone to Japanese cuisine.
