Their healthy dishes are popular because they are made without any unnecessary use of fresh cream or butter. They have over 60 types of vegetables, most of which are stocked after being freshly harvested that morning in the Miura Peninsula. Their signature dish is the [Tsuyudashi Shabu-shabu] (sliced meat parboiled with vegetables), in which meat is quickly boiled in dashi made of kelp, bonito flakes, small dried sardines, and other ingredients. It is a very healthy dish, as any excess oil is removed during the cooking process. The aroma and umami of the dashi bring out the flavors of the ingredients.
