1. Ronjin (Matsue / Shabu-shabu and Sukiyaki)

Ronjin is a long-established shabu-shabu (sliced meat parboiled with vegetables) restaurant located along the moat of Matsue Castle. The 1st floor has both tables and zashiki-style (low tables on tatami floors) seating, and the 2nd floor has private rooms where the Japanese furnishings create an elegant ambience throughout. At the windowside seats, you can take in a scenic view of the majestic Matsue Castle while enjoying your meal. You'll definitely want to try the [Shabu Shabu] (serves 1 person) (3,600 JPY). It features Shimane Kuroge Wagyu (a type of high-quality beef), which is characterized by its exquisite balance of tender red meat and savory fat, served with ponzu (citrus-seasoned soy sauce), as well as a sesame dipping sauce made with a secret recipe for 60 years since the restaurant's founding.

2. Sky View candle (Matsue Shinjiko-Onsen / Western Cuisine)

Sky View candle is a restaurant overlooking Lake Shinji, which was selected as one of Japan's top 100 notable places with iconic sunset views. The restaurant is located on the 9th floor of Matsue New Urban Hotel, which stands on the bank of Lake Shinji. Within the spacious interior, you can partake in an extravagant buffet lined with an assortment of foods, many of which are made with locally produced ingredients. The breakfast buffet is 1,300 JPY per person, the lunch buffet is 1,300 JPY (plus tax) on weekdays and 1,500 JPY (plus tax) on weekends and national holidays, and the dinner buffet is 3,780 JPY.

3. Restaurant Nature (Kimachi / French Cuisine)

Restaurant Nature is a French restaurant located inside of Kimachi Stone Museum. Light fills the spacious restaurant through a massive window, giving the entire room an open, bright atmosphere. A view of the quarries and trees contribute to the calm ambience. The head chef gathers the ingredients himself and serves dishes highlighting the original flavor of seasonal vegetables. You can savor sumptuous dishes like the [Pidgeon Rotisserie with Gelatin Sauce] and the [Foie Gras Poele with Truffle Risotto].

4. Pizzeria UWOZA (Matsue / Italian Cuisine)

At Pizzeria UWOZA, you can enjoy authentic Italian fare prepared by a chef who trained at a world-renowned restaurant in Italy. The cheese and tomato cans are imported from Italy, while the organic vegetables are supplied from contracted farms. The fresh pizza dough is set to rise for 12 hours before baking it in a brick oven. Their most popular dish is the [Margherita DOC] (1,880 JPY), which is made with water buffalo milk mozzarella cheese.

5. San-in Sakaba (Matsue / Japanese Izakaya)

San-in Sakaba is an izakaya (Japanese pub) that serves food made with local ingredients and local sake (Japanese alcohol). Their fish and shellfish are caught off the coast of the San-in region, which along with their Shimane Wagyu, Okuizumo Pork, and Fukawa Herb Chickens, can all be enjoyed in the comfort of the warm, wooden interior. The manager's recommendation is the [Lavish Assortment of Seasonal Sashimi] (1,600 JPY). There is also the [Manyo Beef Pickled in Miso] (1,350 JPY), in which the beef is pickled in miso for over 2 days before being grilled and served. The dish also goes perfectly with the local sake!

6. Sashimi teishoku and Nodoguromeshi Sakuragawa (Matsue / Japanese Cuisine)

This eatery was recently reopened on June 19. The newly remodeled exterior has further polished its already warm and welcoming atmosphere, and the interior is very cozy and homey. You can rest your legs in the comfortable seats within the private horigotatsu (sunken kotatsu table) rooms while enjoying your meal. Recommended dishes include the [Shimane Sashimi Set] (1,404 JPY) and the [San-in Nodoguromeshi] (From 1,944 JPY), which is prepared with the luxurious blackthroat seaperch.

Yamaoka takes exceptional care in only using fresh, local ingredients in order to bring out the best flavors of the local dishes they serve. The restaurant was first built by remodeling what was once a solitary house, which greatly contributes to the cozy interior. Fresh fish is carefully selected every morning from a fishing port in Shimane, and they also go to the lengths of using meat and vegetables from Shimane. Popular dishes include the [Sashimi Assortment] (From 1,300 JPY) and the [Grilled Wagyu] (From 1,200 JPY) made with Shimane Wagyu beef. There is also a plentiful selection of sake to choose from, all of which complement the Shimane cuisine.

Issey is an izakaya that has been loved by the locals since it opened over 30 years ago. Inside the well-lit, vibrant interior, you can enjoy numerous dishes made using ingredients produced in Shimane. The restaurant's specialty is the [Shimane Wagyu Teppanyaki] (ingredients grilled on an iron griddle) (1,300 JPY), where the exquisitely marbled Shimane Wagyu beef is served with an original dipping sauce made with a soy sauce base and a touch of wine. This exclusive dish is limited to 10 orders a day. Also consider trying the [Shimane Wagyu Tendon Stew] (550 JPY), a tried and true dish that has been popular since the restaurant first opened its doors.

9. Kaiten Sushi Hokkaido Gakuen-dori Branch (Matsue / Conveyor Belt Sushi)

At this conveyor belt sushi restaurant you can enjoy sushi made with fresh ingredients. Although typical sushi restaurants have a rather high-class, hard-to-approach image, conveyor belt sushi restaurants offer a lively, family-oriented atmosphere that is popular amongst families with small children. Fresh fish is primarily brought in from a fishing port in Shimane, and a varied assortment of many different kinds of sushi make their way around the conveyor belt in the restaurant. The sushi goes for 120 JPY and up per plate. The [Premium Chutoro] (medium fatty tuna) (380 JPY) and the [Trio of Grilled Flavors] (380 JPY), which comes with grilled razor clam, salmon, and eel, are both highly recommended!

10. Konneko-ya (Matsue Shinjiko-Onsen / Izakaya)

Konekko-ya is a seafood restaurant with a panoramic view of Lake Shinji. The restaurant is decorated in a traditional Japanese aesthetic sense, and the interior offers a wide range of seating from counter and box seats to private rooms. Natural light shines in on the windowside seats, where you can enjoy your meal with a picturesque view of the scenery. The [Sake-Steamed Shijimi Clams] (880 JPY (plus tax)) is made with large shijimi clams caught in Lake Shinji, and the concentrated rich umami (Japanese savory taste) produced by the fresh, local ingredients makes it a highly popular menu item. For lunch, the [Kaisendon Lunch] (rice bowl dish with seafood) (1,250 JPY (plus tax)) is highly recommended!
