Their specialty is the [Steamed Conger Eel and Herbs with Fresh Tomato Aroma]. Consisting of alternating layers of conger eel and herbs that have been steamed, this dish only reached its current height of deliciousness after a lot of trial and error. This restaurant has a history of orthodox Edo-mae sushi (a type of sushi, predominantly nigiri-zushi, which has a long history of being eaten in Tokyo), but is also extremely flexible and open to attempting newer, creative, and original nigiri-zushi.
